Pâtisserie Le Choux-Colat was born from a lifelong love of French pastry — the kind that takes years to master and seconds to fall in love with. Chef Ely Salar trained in the tradition of classical pâtisserie, learning that every fold, every layer, and every gram matters.
The name is a playful nod to choux pastry and chocolate — "choux-colat" echoing the French word for chocolate. Serious craft, approached with warmth.
